BBQ Chicken Stuffed Spaghetti Squash



While on my usual hunt for healthier delicious recipes I came across this colorful tummy pleaser. All your favorite things about BBQ Chicken Pizza stuffed oozing with goodness .

BBQ Chicken Stuffed Spaghetti Squash are stuffed with sweet tangy BBQ sauce, tender chicken for additional protein (I even used rotisserie chicken for a quick shortcut), just the right amount of cheese for that gooey cheese appeal, and as few or as many vegetables as you prefer. I usually top it with diced tomatoes and red pepper, but this time I just used red onions.

Ingredients

Include everything your reader needs to make this recipe perfectly, with measurements, optional additions, or alternatives. For example:

  • 2 chicken breasts

  • 1 ¼ cup barbecue sauce separated

  • 1 spaghetti squash

  • 1 tablespoon olive oil

  • ½ cup cheese shredded

  • ¼ cup red onions sliced or diced

  • ¼ cup orange bell peppers diced

  • ¼ cup cilantro fresh, for garnish


Directions


  1. Add the chicken breasts to the slow cooker with 1 cup of barbecue sauce on top. Cook on low for 6 hours or high for 2-4 hours. Shred the chicken using two forks.

  2. Preheat oven to 400 degrees Fahrenheit. Scoop out the seeds in the center of the spaghetti squash with a spoon after slicing it in half. Drizzle with olive oil and place the halves on a baking tray upside down. Add a dash of water to the pan's bottom. Bake for 45 minutes, or until a fork inserted into the center comes out clean. Allow it to cool enough to handle once it has done cooking. To fluff the noodles, scrape the sides with a fork.

  3. Add ¼ cup of cheese to each boat, then divide the shredded chicken to each boat. Sprinkle 1 cup of barbecue sauce on top followed by the cheese, onions, peppers.

  4. Bake at 350 degrees F for 15-20 minutes to cook the onions and crisp the top slightly. Garnish with the remaining ¼ cup barbecue sauce and cilantro.


NOTES


Instead of cooking the chicken in the slow cooker, this dish can also be made with roasted chicken. Before stuffing the squash, shred cooked chicken and blend with barbecue sauce.

You may also make a stuffed spaghetti squash casserole instead of making them in boats. Cooked squash, cooked chicken, barbecue sauce, cheese, peppers, and onions are layered in a casserole dish. Cover and bake at 350 degrees for 15-20 minutes. Serve with additional sauce and cilantro on the side.
